De nombreuses études scientifiques appuient, explicitent et informent sur les multiples facettes de la pertinence des régimes à base de plantes.
Les avantages des aliments végétaux sur les performances et fonctions de l’organisme sont avérés par les faits suivants :
I. La source de l’énergie
1. Les plantes sont pour ainsi dire les seuls aliments contenant des hydrates de carbone qui sont :
- la première source d’énergie utilisée par le cerveau et les muscles
- la source d’énergie dont les sous-produits sont propres
- une source d’énergie naturellement stockée par le foie et les muscles sous la forme de glycogène
- une source d‘énergie efficace ne créant pas de surchauffe de l’organisme (non-thermogénique)
- une source d’énergie qui ne peut jamais être surdosée
- une source d’énergie qui permet une motivation à entreprendre.
2. Comparativement l’énergie fournie par les protéines ou les matières grasses :
- des sources d’énergie utilisées en deuxième intention et non-directement disponible (nécessitant la transformation de la néoglucogenèse)
- des sources d’énergie dont les sous-produits sont toxiques et pro-inflammatoires (comme notamment les corps cétoniques [ketonic bodies])
- une source d’énergie naturellement stockée dans les adipocytes dont la disponibilité est inférieure (biodisponibilité et catabolisme en terme qualitatif et célérité).
- des sources d'énergie en partie gaspillée (30 à 40%) et créant la surchauffe de l’organisme (thermogénique)
- des sources d’énergie respectivement acidifiantes et ‘encrassantes’ de l’organisme.
- une source d’énergie créant une aboulie et une perte de la volonté.
